It’s Pancake Day

One of my top meals that I have on a weekly basis is a pancake stack. I just can’t get enough of them.

Here’s my delicious go to Protien Pancake recipe that’s featured in both of my online programs.

PROTEIN PANCAKE STACK

INGREDIENTS
2 medium Eggs
1 tblsp (30g) Protein Powder
Dash of Milk
Spray Oil
0% Greek Yogurt
Raspberries
Blueberries
Chocolate Sauce

METHOD
In a mixing bowl add 2 eggs, protein powder and a dash of milk and whisk until you form a smooth pancake batter

Put pan on med/high heat and coat with spray oil

Add a serving spoon of batter to the pan per pancake and keep them separate. You should fit 3 pancakes into the pan.
Cook for 2 mins and turn over, cook for another 2 mins then bring them out of the pan.

Repeat the process with the remaining batter.

To serve place one pancake on your plate and spread a tsp of Greek yogurt ontop. Then place the second pancake ontop. Repeat the process until the last pancake is ontop then add a generous blob of Greek yogurt and a hand full of raspberries & blueberries ontop.

Lightly drizzle with chocolate sauce
